Crispy Potato Bites with Brie, Caramelized Onions and Bacon

I wanted to enjoy a tartiflette, but in a mini version, using cheese that is accessible and easier to find here in Quebec. I love this comforting French dish, which is perfect for sharing with family or friends! So I had the idea of serving it in bite-size portions to make it more elegant.

I love tartiflette, but why not serve it in bite-size portions to make it more elegant for your cocktail parties? I use Brie because it’s more widely available (and cheaper!) in Quebec.

It’s hard not to love this combination of flavors!

Ingredients

Preparation

Preheat the oven to 400°F (200°C).

In a large skillet (I use cast iron), heat the olive oil over medium heat. Add the potato slices and cook for 10 to 12 minutes, until golden brown and tender. Season with salt and pepper and set aside on paper towels.

In the same skillet, cook the bacon pieces until crispy. Add the chopped onion and thyme, then cook over low heat for 10 to 12 minutes, until the onions are caramelized. Remove the thyme sprig.

4.

On a baking sheet lined with parchment paper, place a potato slice, a spoonful of the onion and bacon mixture, and a slice of brie.

5.

Bake for 10 minutes, until the Brie is melted and the bites are golden brown. Garnish with a drizzle of honey and a little fresh thyme, if desired. So good!
