Sweet Potato Fries with Goat Cheese Drizzle Sauce

Sweet Potato Fries with Goat Cheese Drizzle Sauce

This recipe is probably my favourite I made in recent months. You can qualify it as a fancy and healthier version of a poutine (or loaded fries). Maybe the purists will come at me for saying that, but oh well. I just love the pairing of the goat cheese, lime juice and the spicy sweet potato fries!

1.

Preheat your oven to 400°F (200°C).

2.

Line a baking sheet with parchment paper and spread the sweet potato fries evenly on it. Sprinkle the chili powder, garlic powder, paprika, salt, and drizzle with olive oil. Toss everything well with your hands to coat the fries evenly.

3.

Bake in the oven for 15 minutes.

4.

Meanwhile, prepare the sauce by mixing the soft goat cheese, yogurt, lime juice and zest, garlic, red wine vinegar, salt, and chili flakes (if using) in a measuring cup or small bowl. Blend the sauce using an immersion blender or whisk until smooth and creamy.

5.

When the fries are ready, let them cool slightly. Transfer the fries to a large plate and pour the sauce over the top. Garnish with crumbled goat cheese and fresh herbs.
