Turkey and Cranberry Club Sandwich

One of my favorite ways to prepare leftover turkey breast!
Here is a great lunch idea for the days following my roasted turkey recipe. My version includes cranberry sauce (which you probably have leftover along with the turkey). I’ve also tried it with cherry jam, and it was delicious!
I also suggest a turkey, barley, and vegetable soup.

Fry the bacon in a pan or bake on a baking sheet at 375°F for 15 minutes until extra crispy. Drain on paper towels.
Toast the bread slices. Spread mayonnaise on the first slice of bread. Layer with lettuce, 2 to 3 turkey slices, and 1.5 bacon slices (cut in half). Season lightly with salt and pepper.
To build the layers, add a second slice of bread, spread with both mayonnaise and cranberry sauce. Layer with more turkey, lettuce, and extra bacon (if desired). Spread mayonnaise on the final slice of bread and close the sandwich.
Cut into four triangles diagonally and secure with toothpicks for that classic restaurant look. I love serving this with extra cranberry sauce and mayo on the side!
