You probably ate this meat pasta dish from a box when you were a child. The good news is that it’s easy to make at home, with less salt and much more flavor. My version includes miso for an umami explosion!

Hamburger Helper reimagined…with miso!

If, like me, you grew up eating the famous boxed pasta and meat dish, get ready to discover its grown-up version which is frankly more delicious and completely homemade. Here, we take the comforting spirit of Hamburger Helper: the tender pasta, the creamy sauce, the delicious seasoned beef flavor, and take it to the next level!

The twist? A touch of white miso, which transforms this classic into an umami bomb! It’s the kind of recipe that tastes nostalgic, but with a definite upgrade: richer, tastier, and above all… so easy to make!

Simmer everything in a single pot (less dishes!), add some flavorful cheddar for creaminess, then a zest of lemon to bring out the flavors. The result: a weeknight meal that practically makes itself.

Ingredients

Preparation
1.

In a large saucepan or pan over medium heat, add the olive oil, then the onion and garlic. Season with salt and pepper, stir, and cook for 5 minutes, stirring regularly.

Add the ground beef and cook for 3-4 minutes or until the meat changes color on the outside. Drain the fat.

Except for the cheese, add the remaining ingredients. Mix well, cover, and bring to a boil. Reduce heat to low and simmer for 10 to 12 minutes or until pasta is cooked al dente.

Stir occasionally.

***If the liquid has evaporated but the pasta is not completely cooked, add about 1/4 cup of milk and continue cooking for a few minutes.

Remove from heat and add cheese and lemon zest. Stir to melt, then serve immediately! Prefer it creamier? Add a little milk, to taste, then stir.

To serve: garnish the dish with cheese, parsley, pepper, and more lemon zest (if desired). Serve with broccoli or a salad of your choice.
