Preparation

Grate the carrots using a cheese grater or food processor. Transfer to a large bowl and add the salt. Let sit for 10 minutes. Taste the carrots; if they’re too salty for your liking, rinse and drain using a clean cloth.

Add all the other ingredients and stir well. Refrigerate for at least 30 minutes before serving.
