Spicy Ramen Noodles with Chicken and Green Onions

Elevated with Lee Kum Kee Sriracha Chili Sauce – a flavor-packed dish ready in under 30 minutes! I get fresh ramen noodles from the refrigerated section of the Asian grocery store, but dried noodles work just as well!
Tips for a perfect dish:

Use fresh noodles if possible: They have a softer, chewier texture and absorb the sauce better. Dried noodles work too—just keep an eye on the cooking time.

Let the chicken brown before breaking it up: This step adds a delicious caramelized flavor that really elevates the dish.

Don’t skip the fresh ginger and garlic: These are key to building depth and warmth in the sauce.

Adjust the heat to your preference: Start with 2 tablespoons of sriracha if you prefer it milder, then add more as desired.

Add the butter at the end: It gives the sauce a silky texture and helps coat the noodles beautifully.

Lean on fresh toppings (lime, cilantro, sesame): They balance the richness of the dish and add a burst of freshness.

Bring a large pot of water to a boil and season with kosher salt. Cook the noodles for about 8 minutes or according to package instructions.
Heat a large pan over medium-high heat with the oil and add the ground chicken. Break it into large chunks and let it sear without stirring for about 3–4 minutes until nicely browned. Flip and cook for another minute. Season with a pinch of salt.
Remove the chicken from the pan and set aside on a plate. Add the green onions, ginger, and garlic to the pan and cook over medium heat for about 2 minutes.
Deglaze the pan with the tamari sauce and stir well. Add the maple syrup, Sriracha chili sauce, tomato paste, and lime leaves. Return the chicken to the pan and break it into smaller pieces. Bring to a simmer and cook for 1–2 minutes. Add the rice vinegar and butter, stir to combine, then turn off the heat.
Add the noodles into the pan and toss well to coat them with the sauce.
Serve immediately in a pasta bowl and garnish with toasted sesame seeds, lime wedges, sliced green onions, and fresh cilantro leaves.
