I absolutely love ‘Nduja!
This spicy Italian pork sausage, originally from the Calabria region, melts with heat and acts as a chili paste. I add it to my BBQ-cooked pizza using Kana kitchen tools: I use the stainless steel plate to form a rectangular pizza, perfect for hosting!
I also top it with homemade tomato sauce (cooked on the BBQ in the Kana cast iron pot) and add mozzarella, ultra-creamy ricotta, and lemon zest just before serving.

Preparation
1. For the sauce:
Preheat the BBQ until it reaches an internal temperature of 350°F.

In a large Dutch oven or cast-iron skillet, add all the sauce ingredients. Place it on the BBQ grate and close the lid. Cook for 15 minutes. Stir to break up the tomatoes with a wooden spoon. Add about 2 tbsp of water. Cook another 10 minutes with the lid closed. Set aside.
3. For the pizza:
Preheat the BBQ until it reaches 600°F.

Roll out the dough on a floured countertop into a rectangular shape. Add the olive oil to the bottom of the Kana tray. Turn off one side of the BBQ for indirect cooking – place the tray on the side without heat. Close the lid and let the tray heat up. After a few minutes, carefully place the dough on the tray, taking care not to burn yourself.

Add the sauce, mozzarella, 4–5 spoonfuls of ‘Nduja, and the anchovies. Close the BBQ lid and cook for about 8 minutes. Rotate the tray after 8 minutes and cook an additional 2 minutes for even cooking.
6. To serve:
Remove the pizza from the BBQ and place it on a cutting board. Cut the pizza into 6 slices. Add a bit of ricotta on each slice and sprinkle with grated Parmesan, lemon zest, and fresh basil leaves.
