The real star of the show is the creamy chipotle sauce made with silken tofu: indulgent and naturally high in protein. I love tofu for its versatility. I was looking for a way to incorporate this protein into a flavor-packed dish to prove that tofu is just as amazing in tacos!
In these crispy vegan tacos, the tofu is “smashed” directly onto the tortilla before being pan-fried until golden. These tacos are fresh, smoky, slightly spicy, and truly satisfying! I top them with homemade pickled red onions, cucumber, cilantro, and a creamy lime-chipotle silken tofu sauce.
This sauce has everything: creamy, spicy, high in protein, and tangy. You can easily use it in other recipes too! It keeps for 3 to 4 days in the refrigerator.
Without even meaning to, these tacos are vegan, lactose/dairy-free, nut/peanut-free, and it’s easy to make them gluten-free! A huge plus if you have to accommodate guests’ food allergies.
Tips for a perfect recipe:

Pat the tofu dry for maximum crispiness: even though it’s firm tofu, take the time to dry it as much as possible with a clean kitchen towel or paper towels before crumbling it.

Crumble the tofu very finely so that it adheres well to the tortilla.

Don’t put too much tofu on the tortilla: a thin layer will get much crisper. This way, it cooks quickly without making the tortilla soggy.

Use a weight to press down: as mentioned, placing a small metal weight (like a burger press or a small saucepan) on the tofu while it cooks on the tortilla guarantees perfect adhesion and a golden-brown crust.

Prep the sauce and pickled onions in advance for a quick and easy dinner.

Mix the vinegar, hot water, sugar, and salt. Add the onion and let marinate for at least 15 minutes.
Blend the silken tofu (using a blender or immersion blender) with the lime juice and zest, chipotle, garlic, olive oil, and salt until smooth. Adjust the consistency with a little water if needed.
Crumble the firm tofu very finely. Add the flour, cornstarch, cumin, smoked paprika, chili powder, garlic powder, olive oil, salt, and pepper. Mix well.
Heat a pan with a little oil over medium-high heat. Place about 2 to 3 tbsp of the tofu mixture onto a tortilla. Press down firmly with a spatula to form a thin layer. Cook for 3 to 4 minutes on the tofu side until the tofu is very crispy—I like to place a small metal weight on top to make sure the tofu adheres well to the tortilla. Flip and cook for another 1 to 2 minutes until the tortilla is golden brown.
Top each taco with the creamy chipotle sauce, pickled onions, cucumber, jalapeño slices (optional), and fresh cilantro. Finish with a squeeze of fresh lime juice.
