I love having homemade mayo in the fridge, especially when hosting!

My version uses Meyer lemon: a super fragrant and slightly sweet lemon variety. You can also add chives or tarragon for extra flavor.

The oven fries need to bake at a high temperature, and don’t forget the fresh rosemary because it makes all the difference!

Preparation
1. For the lemon mayonnaise:

In a measuring cup (like a Pyrex), add the egg yolks, vinegar, and mustard. Blend with an immersion blender until smooth. Slowly add the neutral oil while blending to incorporate air and emulsify. Once the mayonnaise is thick and creamy, add the olive oil, lemon zest, lemon juice, and salt. Blend until smooth.

Taste and adjust seasoning if needed. Serve the lemon mayo with hot fries. Mayonnaise keeps in the fridge for up to one week in an airtight container.

3. For the fries:

Preheat oven to 220 °C (425 °F).

Put the fries in a large bowl and add oil, rosemary leaves, and salt. Toss to coat evenly.

Place the fries in a single layer on a baking sheet lined with parchment paper. Make sure fries don’t touch for best results.
Bake for 20 minutes, flip, then bake another 10 minutes until golden and crispy.
