Add the chickpeas to a large bowl and mash them using a potato masher or fork until fairly smooth. Add the grated zucchini and all remaining ingredients. Mix well with a wooden spoon or your hands.
Shape the mixture into patties about 2 inches in diameter. Set aside. Heat a large nonstick skillet over medium-high heat and add 2 tbsp oil. Fry the patties for 2–3 minutes per side and drain on paper towels. Depending on the size of your skillet, you may need to cook in 2–3 batches.
Combine all sauce ingredients in a small bowl and set aside.
Arrange the patties on a large serving platter and place the sauce in a small bowl in the center. Enjoy immediately.
