Yes, it’s absolutely possible to make delicious fresh fish patties with fewer than 5 ingredients! The trick is to finely chop half of the trout flesh until it becomes paste-like so it holds everything together. For aromatics, I go with ginger, coriander, lime, and either Pad Thai sauce (by B-spicy) or oyster sauce. The croquette has a flavor that’s both delicate and fragrant and it melts in your mouth… SO good with a salad for lunch!

Preparation

Cut half of the trout fillet into strips, then into small cubes. Finely chop this mixture until it becomes a coarse paste that holds together. Cut the remaining trout into strips, then into small cubes.

Transfer everything to a bowl and add the coriander, ginger, lime zest, and Pad Thai or oyster sauce. Season with salt and pepper, and mix well. Divide the mixture into four patties and set aside.

Heat a large non-stick pan with a drizzle of avocado oil. Fry over medium heat for about 2 minutes, then drizzle a bit of oyster sauce over each patty. Flip and do the same on the other side. Continue cooking for about 3 more minutes, until nicely browned.

Serve garnished with lime zest and juice. Enjoy with a salad or in pita bread as a sandwich.
