Vierge Sauce:

Preparation
1. Prepare the cabbage:

Preheat the oven to 375°F (190°C).

2.

Place the cabbage wedges on a baking sheet lined with parchment paper. Drizzle with a little olive oil and season with salt and pepper.

Bake for 25 minutes, turning the wedges halfway through cooking.

4. For the topping:

Meanwhile, mix the breadcrumbs, grated Parmesan, chopped olives, parsley, garlic, olive oil, salt, and pepper. Mix well until the mixture is homogeneous and slightly moist.

5. Vierge sauce:

Combine all the sauce ingredients in a bowl. Stir and refrigerate until ready to use.

6. Continue cooking:

Remove the cabbage pieces from the oven and let cool for a few minutes. Spread the crispy topping over the roasted cabbage wedges.

Adjust the oven to convection roast mode and bake for 15 minutes until the topping is golden and crispy.
If your oven doesn’t have this function, bake for 10 minutes, then broil for 5 minutes.

8. To serve:

Serve the vierge sauce at the bottom of the plate and place the cabbage wedge on top. Sprinkle with finely grated Parmigiano Reggiano. So good.
