Bring a large pot of salted water to a boil and cook the pasta until al dente, about 9 minutes.
Meanwhile, heat a large nonstick pan over medium heat and melt the butter. Let it brown slightly, stirring continuously and lowering the heat if needed. Add about ¼ cup of pasta cooking water and stir. Add the drained pasta, turn off the heat, and stir vigorously. Add the grated cheese in 2-tablespoon increments, stirring after each addition until you get a creamy texture. Add more pasta water as needed to loosen the sauce.
Serve immediately with a drizzle of olive oil, a pinch of sea salt flakes, some lemon zest, freshly ground black pepper, and more Parmesan. SO good.
