Preheat the oven to 425°F (220°C).
Tear the tofu with your hands directly onto a baking sheet lined with parchment paper. You want irregular pieces about ½ to 1 inch in size.
Add the salt, pepper, cornstarch, and avocado oil on the tofu. Mix well and bake for about 30 minutes, until the tofu is golden brown and crispy.
In a large bowl, mix the gochujang, tamari, rice vinegar, and maple syrup (if using).
Add the crispy tofu and mix well to coat each piece.
Serve with rice and garnish with cucumber, green onion, cilantro, and a drizzle of tamari to taste. Finish with a squeeze of lime juice.
