Another superb recipe made with less than five ingredients! I love chicken with apricots, and this version is bursting with flavor and super easy to make. Cooking it on a baking sheet creates a delicious sauce with the juices from the chicken. Serve with basmati rice, and you have a great weeknight meal ready in less than 30 minutes!
Why make this recipe?
- Quick and easy: Few ingredients, minimal prep time, perfect for a weeknight dinner.
- Balanced flavors: Apricot jam adds a lovely fruity sweetness that pairs perfectly with salty tamari, tangy rice vinegar, and fresh green onions.
- Versatile: Can be served with rice, stir-fried vegetables, Asian noodles, or even in a sandwich.
By baking it in the oven and then broiling it, the chicken turns golden brown and caramelized, while remaining tender and juicy. The perfect dish if you like sweet and savory flavors without too much refined sugar.
The tools I recommend:

Marinate the chicken in a little tamari sauce – at least an hour, up to overnight.
Preheat the oven to 425°F. In a large bowl, combine the chicken, salt (use lightly due to the soy sauce), pepper, olive oil, tamari, green onions, rice vinegar, and apricot jam.
Place the chicken pieces on a baking sheet lined with aluminum foil. Bake for 10 minutes.
Continue cooking under the broiler for 5 minutes to caramelize the chicken. Cooking time may vary depending on the intensity of the oven.
Serve with basmati rice, cooking juices, and more chopped green onions.
Bon appetit and enjoy!
