Another superb recipe made with less than five ingredients! I love chicken with apricots, and this version is bursting with flavor and super easy to make. Cooking it on a baking sheet creates a delicious sauce with the juices from the chicken. Serve with basmati rice, and you have a great weeknight meal ready in less than 30 minutes!

Preparation

Marinate the chicken in a little tamari sauce – at least an hour, up to overnight.

Preheat the oven to 425°F. In a large bowl, combine the chicken, salt (use lightly due to the soy sauce), pepper, olive oil, tamari, green onions, rice vinegar, and apricot jam.

3.

Place the chicken pieces on a baking sheet lined with aluminum foil. Bake for 10 minutes.

Continue cooking under the broiler for 5 minutes to caramelize the chicken. Cooking time may vary depending on the intensity of the oven.

Serve with basmati rice, cooking juices, and more chopped green onions.
