A Protein-Packed, Creamy, and Fresh Green Sauce

I am already a huge fan of green sauces, as you can probably tell. Any sauce made with fresh herbs speaks to me! It adds so much freshness to so many different dishes.

I originally thought of this sauce to serve alongside my sheet-pan salmon with white beans, potatoes, and asparagus. But you can easily incorporate this sauce into all your favorite meals!

Why make this recipe?

  • The cottage cheese secret: creates a rich, mayonnaise or sour cream-like texture with less fat and a boost of protein! Even people who don’t normally like cottage cheese will love this sauce.
  • Ready in 5 minutes: no cooking or simmering required. Just toss everything into the blender!
  • Ideal for meal prep: easily stores in an airtight mason jar in the refrigerator for 4 to 5 days, ready to elevate your meals all week long.

Ingredients

Preparation
1.

Place all the ingredients into the bowl of an electric blender or a small food processor. Blend on high speed for 1 to 2 minutes until the texture is completely smooth, creamy, and a vibrant green (no cottage cheese curds should remain).

2.

Taste and adjust the seasoning with salt, pepper, or lime juice according to your preference. Store in the refrigerator until ready to serve.

3.

Serve with your favorite dishes. I recommend drizzling it over my sheet-pan salmon with white beans and asparagus.
