Ingredients

Preparation

For the garlic (Ail Confit): Peel the cloves or cut the garlic bulb in half. Place in an oven-safe dish or wrap in aluminum foil with a generous drizzle of olive oil, salt, and pepper.

Bake at 325°F (160°C) for 60 to 90 minutes until golden and soft.

Preheat your oven to 350°F (180°C). Fit the puff pastry into a tart or pie mold and prick the bottom with a fork.

Spread half of the grated cheddar evenly over the bottom of the crust.

In a large bowl, whisk together the eggs, heavy cream, milk, roasted garlic cloves (slightly mashed), salt, pepper, and nutmeg.

Pour the egg mixture over the cheese and sprinkle the remaining cheddar and the fresh chives on top.

Bake for 45 to 55 minutes, or until the quiche is golden brown and the center is set. Let the quiche rest for 5 to 10 minutes before slicing to ensure clean edges.
