Sharp Cheddar, Roasted Garlic and Chive Quiche
love a quiche that’s out of the ordinary: here’s a version with sharp cheddar and melt-in-your-mouth roasted garlic.
A bold pairing of sharp cheddar and slow-roasted garlic. By cooking slowly in olive oil, the garlic loses its pungency, transforming into a sweet, buttery paste that literally melts in your mouth.
Perfect for brunch or a simple yet satisfying lunch!
Don’t forget to plan for about 1 to 1.5 hours of cooking time for the roasted garlic.
Why make this recipe?
-
A new flavor profile: the pairing of aged cheddar and roasted garlic creates a complex flavor depth rarely found in traditional quiches.
-
Sweet & sharp balance: once roasted, garlic loses its pungency and becomes sweet and buttery, perfectly balancing the sharp, salty character of the cheese.
-
For the cheese lovers: with nearly 3 cups of sharp cheddar, this recipe makes no compromises on indulgence, resulting in a rich and velvety texture.
-
Mastering roasted garlic: Learning to make your own “ail confit” is a kitchen game-changer. The aroma in your kitchen alone is worth the effort!
For the garlic (Ail Confit): Peel the cloves or cut the garlic bulb in half. Place in an oven-safe dish or wrap in aluminum foil with a generous drizzle of olive oil, salt, and pepper.
Bake at 325°F (160°C) for 60 to 90 minutes until golden and soft.
Preheat your oven to 350°F (180°C). Fit the puff pastry into a tart or pie mold and prick the bottom with a fork.
Spread half of the grated cheddar evenly over the bottom of the crust.
In a large bowl, whisk together the eggs, heavy cream, milk, roasted garlic cloves (slightly mashed), salt, pepper, and nutmeg.
Pour the egg mixture over the cheese and sprinkle the remaining cheddar and the fresh chives on top.
Bake for 45 to 55 minutes, or until the quiche is golden brown and the center is set. Let the quiche rest for 5 to 10 minutes before slicing to ensure clean edges.
Bon appetit and enjoy!
