Spicy Aioli :

Preparation
1. Make the Aioli :

Add all the spicy aioli ingredients to a container and blend using an immersion blender until smooth.

2. Roast the Peaches :

Slice the peaches into wedges about 1.5 cm thick. Place them on a baking sheet and drizzle with olive oil, honey, salt, and dried herbs. Roast under the broiler for 10–12 minutes, until tender.

Alternative: Grill them in a pan for 2–3 minutes on each side. Set aside.

3. Grill the halloumi :

Cut the halloumi into slices about ½ cm thick. In a hot pan with a drizzle of oil, grill the halloumi for 1–2 minutes on each side until golden. Remove the cheese from the pan and briefly add the roasted peaches, honey, and thyme. Cook over high heat for about a minute. Set aside.

4. Assemble the Sandwich :

Slice the bread in half lengthwise. Scoop out a bit of the soft bread from the center to make space for the ingredients. Toast the bread under the broiler.
Spread aioli on both halves, then layer arugula, grilled halloumi, and roasted peaches. Top with red onion slices and a drizzle of balsamic glaze. Close the sandwich and cut in half. Wrap in parchment paper and enjoy immediately!
