Summer is around the corner, and I wanted to share the type of meal I make after a weekday gym session. It has everything: protein, iron-rich veggies, carbs, and healthy fats. And don’t skip the ginger-green onion sauce—it’s absolutely delicious!

Ingredients
Chicken and rice:
Green Onion Sauce:

Preparation
1.

In a blender, combine the spinach, 1 cup water, garlic, and olive oil. Pour into a pan or pot with the rice. Add an additional cup of water. Bring to a boil and cook for 10–12 minutes until the rice is done. Add more water if needed.

Meanwhile, heat a large pan over medium heat with some olive oil. Fry the chicken pieces for about 4 minutes per side. Add roughly 3 tbsp water, cover, reduce the heat, and cook for another 4 minutes until cooked through. Set aside.

To prepare the green onion sauce, combine all ingredients except the oil in a bowl. Heat the oil in a small pan and carefully pour it over the mixture in the bowl. Pour slowly to avoid splattering.

Slice the chicken and serve over the spinach rice. Top with the green onion sauce, fresh cilantro, and roasted sesame seeds. SO good.
