Bring a large pot of salted water to a boil. In a small bowl, mix tamari, hoisin sauce, and Sambal Oelek; set aside.

In a bowl, toss tofu pieces with cornstarch and 1 tsp salt until well coated. In a hot pan with a bit of oil, brown the tofu cubes for 5 to 7 minutes, turning to crisp all sides. Remove from the pan.

Cook the noodles in the boiling water according to package instructions.

Add garlic and grated ginger to the pan and sauté for about 1 minute. Add green onions and green beans with 1 tbsp water. Stir-fry over medium-high heat for 3 to 4 minutes, stirring often. Using tongs, transfer the cooked noodles directly from the pot to the pan. Add tofu, sauce, and about ¼ cup of noodle cooking water. Turn off the heat and stir vigorously to combine all ingredients well.

Serve immediately with a fried egg, kimchi, sesame seeds, and fresh coriander leaves.
