In a small bowl, whisk together the tamari (or soy sauce), maple syrup, toasted sesame oil, and grated ginger. Set aside.
Heat a large skillet or wok over high heat and add a drizzle of neutral oil. Sear the beef in a single layer (work in batches if necessary) for 1 to 2 minutes per side. The meat should be nicely browned but still tender. Remove from the pan and set aside.
In the same skillet, add a little more oil if needed. Add the broccoli florets and stir-fry for 3 to 4 minutes. For the perfect texture: add 2 tablespoons of water and cover with a lid for 1 minute to create a quick steam.
Return the beef to the pan with the broccoli. Add the minced garlic and pour in the sauce. Cook for an additional 1 to 2 minutes, just until the sauce thickens slightly and beautifully coats every piece. Adjust seasoning to taste.
Garnish with sesame seeds and sliced green onions. Serve immediately over a bed of steamed white rice.
