Halloumi and chorizo salad, balsamic vinaigrette with figs

The only salad dressing I let into my kitchen that isn't homemade is Pure J.L. Kraft👌🏼 With ingredients I can pronounce and several flavours that enhance my dishes, it really makes my life easier without compromising on taste!

Servings: 2 to 4
Preparation: 15 minutes
Cooking time: 10 minutes

Ingredients :

  • 1 Spanish chorizo sausage, sliced into large cubes
  • 200g halloumi cheese, cut into large cubes
  • ½ head of romaine lettuce or two baby romaine lettuce, roughly chopped
  • 8-10 cherry tomatoes, halved
  • 1 Hass avocado, sliced into thin half-moons
  • 2 Lebanese cucumbers, roughly sliced
  • 3-4 fresh figs, quartered
  • Fresh basil leaves
  • About 1/4 cup Pure J.L. Kraft Fig Balsamic Vinaigrette

Preparation :

  1. Heat a large nonstick skillet over medium heat and add the chorizo pieces. Cook until the pieces are lightly browned and there is some fat on the bottom of the pan - remove.
  2. Add the halloumi pieces and roast for about 2 minutes on each side. Set aside on paper towels.
  3. Assemble the salad by adding the lettuce to the bottom of a platter, followed by the halloumi, chorizo, avocados, tomatoes, cucumbers, and figs. Sprinkle with basil leaves and add the vinaigrette just before serving. So good.
