I think everyone should know how to make a good homemade salad dressing! It's really easy to make and you control the ingredients you add, unlike many store-bought dressings. These often contain questionable oils and preservatives. Anyway, here's my mustard version that's a hit every time!
Servings: ¾ cup
Preparation: 5 minutes
Cooking: None
Ingredients :
- ½ cup extra virgin olive oil
- 1 ½ tbsp dijon mustard
- 2 tbsp maple syrup
- 3 tbsp rice or white wine vinegar
- Juice of half a lemon
- 2 tsp kosher salt
- Pepper from the mill
To serve:
- Lettuce leaves, frisée niçoise and castelfranco chicory
- Avonlea Cheddar
- Thin slices of red onion
Steps:
- Add all ingredients to a mason jar. Shake the bottle vigorously with the lid on. Set aside.
- To serve, toss a few tablespoons of the dressing into the mixed greens. Serve in a serving bowl and sprinkle with cheddar cheese and red onion slices.
Note : The vinaigrette can be stored in the fridge with the lid on for up to 1 week.
