Serves 4
Ingredients :
- ½ red onion, thinly sliced
- 1 tablespoon white wine vinegar
- 1 tablespoon granulated sugar
- 1 teaspoon sumac
- 1 teaspoon zaatar or dried oregano
- ½ teaspoon salt
- Freshly ground black pepper, to taste
- 3 tablespoons olive oil
- 1 teaspoon red wine vinegar
- 2 large heirloom tomatoes, cut into 6 wedges
- Approximately 100g feta cheese
- 8-10 fresh oregano leaves
- 8-10 fresh basil leaves
Preparation :

In a small bowl, combine the thinly sliced onion, white wine vinegar, and sugar. Stir well and let it sit on the counter for at least 15 minutes.

In a large bowl, add the sumac, zaatar, salt, pepper, and red wine vinegar. Add the tomatoes and toss well. Set aside.

Assemble the salad by placing the tomatoes on a plate. Sprinkle with pieces of feta, marinated onions, and the oregano and basil leaves. Serve immediately.
