Poulet à l’abricot

Apricot Chicken

Another great recipe made with less than 5 ingredients! I love apricot chicken and this version is bursting with flavor and super easy to make. The sheet pan cooking creates a delicious sauce with the juices from the chicken. Serve with basmati rice and you have a great weeknight meal ready in less than 30 minutes!

Preparation: 1 hour (marinade) + 15 minutes

Cooking: 15 minutes

 

Ingredients :

  • 8 boneless, skinless chicken thighs
  • 1 tbsp tamari (or ¾ tbsp soy sauce)
  • 1 tbsp rice vinegar
  • Salt and pepper
  • 1 tbsp olive oil
  • 1 tbsp tamari (or ¾ tbsp soy sauce)
  • 1 tbsp rice vinegar
  • 3 green onions, chopped
  • ½ jar of apricot jam (Bonne Maman) = ½ cup


Steps:

  1. Marinate the chicken in a little tamari sauce - at least an hour to overnight.

  2. Preheat oven to 425F. In a large bowl, combine chicken, salt (lightly salt because of the soy sauce), pepper, olive oil, tamari, green onions, rice vinegar and apricot jam.

  3. Place the chicken pieces on a baking sheet covered with aluminum foil. Bake for 10 minutes.

  4. Continue cooking on the broiler for 5 minutes to caramelize the chicken. The time may vary depending on the strength of the oven.

  5. Serve with basmati rice, cooking juices and more chopped green onions.
