I love using pre-packed ramen noodles for a quick and easy weeknight meal. This version is enhanced with ginger, crispy tofu, green beans, and green onions. I also recommend serving with a fried egg!

Ingredients
- 2 tbsp tamari
- 1 tbsp hoisin sauce
- 1 tbsp Sambal Oelek
- 1 package of ramen noodles (ideally Haiku with shiitakes)
- 1 block of firm tofu (about 400g), patted dry and torn into small, uneven pieces
- 1 tbsp cornstarch
- 1 tsp salt
- 1 clove garlic, finely chopped
- 1 piece of fresh ginger (about 2.5 cm / 1 in), finely grated
- 3 green onions, cut into 5 cm (2 in) pieces
- 8 to 10 green beans, halved
For serving
- 2 fried eggs
- Kimchi (to taste)
- Roasted sesame seeds
- Fresh coriander leaves
Preparation
- Bring a pot of salted water to a boil. Combine the tamari, hoisin sauce, and sambal Oelek in a small bowl and set aside.
- In a bowl, toss the tofu pieces with the cornstarch and 1 tsp. of salt to coat well. In a hot pan with a little oil, brown the tofu cubes for 5 to 7 minutes, turning them over to crisp them on all sides. Remove from the pan.
- Cook the pasta in the pot following the package instructions.
- Add the garlic and grated ginger to the pan. Sauté for about a minute and stir in the green onions and green beans with 1 tablespoon of water. Stir-fry over medium-high heat for 3 to 4 minutes, stirring frequently. Transfer the cooked pasta to the pan directly from the pot using tongs. Add the tofu, sauce, and about 1/4 cup of the pasta cooking water. Turn off the heat and stir vigorously to combine all the ingredients.
- Serve immediately with a fried egg, kimchi, sesame seeds and fresh coriander leaves.
