Greek Chicken Thighs and Potatoes with Tzatziki

I love 5 ingredient recipes but I love them even more when they are easy to make on a baking sheet! I highly recommend making some tzatziki to go with it! Looking forward to reading your comments!

Ingredients* :

Chicken and potatoes:

  • 8 chicken thighs, skin on and bone in
  • 1 tsp kosher salt
  • 1 tbsp dried Greek oregano
  • 1 tsp lemon pepper (zest of 1 lemon, 1 tsp black pepper or store-bought lemon pepper)
  • 1 tsp garlic powder
  • ¼ cup extra virgin olive oil
  • 4 potatoes, cut into quarters

Tzatziki:

  • 1 cup 0% or 2% Greek yogurt
  • 1 English cucumber, grated and drained in a clean cloth
  • 1 small clove garlic, finely grated
  • ⅓ cup fresh dill, coarsely chopped
  • 1 small French shallot, finely chopped
  • Zest of a lemon
  • Juice of one lemon
  • 1 pinch kosher salt
  • Black pepper to taste

Steps:

Chicken and potatoes:

  1. Preheat oven to 400°F (200°C). Place chicken thighs on a baking sheet lined with aluminum foil. Pat chicken thighs dry with paper towels and season with salt on both sides.
  2. In a small bowl, combine olive oil, oregano, lemon pepper and garlic powder.
  3. Add the potatoes to the baking sheet around the chicken pieces. Pour the marinade over the chicken and potatoes. Coat all the pieces well and bake for 40 to 45 minutes, until the chicken is golden brown and the potatoes are tender. You can turn on the broiler for the last 2 minutes for optimal crispiness.

Tzatziki

  1. While the chicken is baking, place a clean dish towel in the bottom of a bowl. Grate the cucumber directly into the bowl and squeeze the pulp, squeezing the towel to remove excess water. (Reserve the juice; it's always delicious in a mocktail.)
  2. Transfer the cucumber pulp to the bowl and add the Greek yogurt, garlic, dill, shallot, zest, lemon juice, salt and black pepper to taste.
  3. Let sit in the refrigerator for at least 15 minutes before serving, to allow the flavors to blend. Serve the chicken thighs piping hot, accompanied by the roasted potatoes and a generous spoonful of fresh tzatziki.

*Please note that olive oil and salt are not included in the 5 ingredients.
