Okay so - this recipe is probably my favourite I made in recent months. You can qualify it as a fancy and healthier version of a poutine. Maybe the purists will come at me for saying that, but oh well. I just love the pairing of the goat cheese, lime juice and the spicy sweet potato fries. The fresh herbs complete the dish perfectly. Serve it at your next dinner party - your guests will love it.
Serves 4 as side
Ingredients:

2 sweet potatoes, cut into 1 ½ cm thick fries

1 tsp mexican chili powder

1 tsp garlic powder

1 tsp paprika

1 tsp kosher salt

1 tbsp olive oil
-
3 tbsp goat cheese, crumbled

Fresh dill
-
Fresh mint leaves
For the sauce

1 150g pack of soft goat cheese
-
½ cup plain yogurt
-
Juice and zest of 1 lime

1 small garlic clove, finely chopped

1 tsp red wine vinegar
-
½ tsp kosher salt
Optional : pinch of chili flakes
Steps :

Preheat your oven to 400F.

Line parchment paper on a baking sheet and lay the sweet potato fries on it.

Add the chili powder, garlic powder, paprika, salt and olive oil. Mix well with your hands. Roast in the oven for 15 minutes.

Meanwhile, make the sauce by combining into a measuring cup the soft goat cheese, yogurt, lime juice and zest, garlic, red wine vinegar, salt and chili flakes if desired. Mix with a hand mixer or with a whisk.

When the fries are ready - let them cool slightly. Place them on a large plate and drizzle the sauce on top. Top with more goat cheese and fresh herbs. SO good.
