Ingredients :
Croquettes
- 200g halloumi cheese (fromagerie l'ancêtre now available everywhere), cut into cubes of about 2cm
- 1 cup panko breadcrumbs
- ½ cup coconut flakes
- 2 eggs, beaten
Hot honey
- 1 cup of honey
- 1 small red chili pepper (or 1 tsp chili flakes)
- 2 tsp apple cider vinegar or white balsamic vinegar
Yogurt and lime sauce (optional)
- ½ cup Greek yogurt
- 1 tsp lime juice
- Zest of a lime
- Salt and pepper, to taste
Preparation :
- Prepare the sauce by mixing the Greek yogurt, lime juice, and zest in a small bowl. Season with salt and pepper. Refrigerate.
- Prepare the spiced honey. In a small saucepan, gently heat the honey until it boils slightly. Turn off the heat and add the chili or chili flakes. Add the cider vinegar. Let it infuse with the residual heat from the pan for about 3 minutes. Pour into a bowl and set aside.
- In a bowl, mix the panko and coconut flakes. Dip each halloumi cube into the beaten egg, then into the panko-coconut mixture, pressing well to ensure the coating adheres. Repeat with all the cubes.
- Preheat your oven or air fryer to 425°F (220°C). Transfer the halloumi cubes to a baking sheet lined with parchment paper. Bake for 12 to 15 minutes, until crispy.

Arrange the warm croquettes on a platter. Drizzle with spiced honey or serve the honey on the side for dipping. Serve with the lime yogurt sauce.
