A perfect recipe for summer: fresh, nourishing and ready in 20 minutes!
This Green Goddess Pasta Salad is the perfect dish for a light lunch, picnic, meatless meal, or a side dish that impresses. Rich in plant-based protein thanks to the legumes, creamy without being heavy, and bursting with freshness from its vibrant herb dressing, it's a sure hit.

Ingredients :
- 1 box of pasta (360g) of your choice (I use mini penne)
- 1 can (360 ml) white beans or chickpeas, drained
- 1 cup fresh or frozen peas
- ⅓ cup fresh dill leaves
- ⅓ cup flat-leaf parsley leaves
- 100g feta cheese, cut into small cubes
- Salt and pepper
- More dill leaves, to serve
- 1 tsp nutritional yeast, to serve
Green goddess sauce:
- ½ bunch of parsley
- ½ bunch of dill
- 1 small clove of garlic
- 4-5 small green onions, roughly chopped
- ½ cup cottage cheese
- ½ cup Greek yogurt
- Zest and juice of one lemon
- 2 anchovies or 2 tsp anchovy paste
- ¾ cup cold water
- Salt and pepper
Preparation :
1. Cook the pasta :
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Add the peas during the last minute of cooking. Drain, rinse with cold water, and set aside.
2. Prepare the Green Goddess sauce :
In a food processor or blender (I use a Blendtec or Vitamix), combine the parsley, dill, garlic, green onions, cottage cheese, Greek yogurt, lemon zest and juice, anchovies, and water. Pulse until smooth and well-blended. Taste and adjust with salt and pepper.
3. Assemble the salad :
In a large bowl, combine the cooled pasta, white beans (or chickpeas), fresh herbs (dill and parsley), and feta cubes. Pour about a cup of Green Goddess dressing over the salad and toss well to coat all the ingredients. Add more dressing to taste and adjust the seasoning.
4. Serve or refrigerate :
Let the salad rest in the refrigerator for at least an hour before serving. It can also be prepared the day before. Sprinkle with nutritional yeast, dill leaves, and more dressing. So good.
