A gourmet grocery classic that's super easy to make at home. I recommend using the grater attachment on a food processor to make the job easier.

Ingredients :
- 1 kg (4 cups) grated carrots
- 1 tbsp kosher salt or 2 tsp sea salt
- 3 tbsp extra virgin olive oil
- 2 tbsp maple syrup
- 1 small clove of garlic
- 1 tbsp rice vinegar
- 1 tsp curry powder
- 2 tbsp finely chopped coriander
- ½ cup roasted cashews or walnuts, coarsely chopped
- ¼ cup raisins, optional
Preparation :

Grate the carrots using a cheese grater or a food processor. Transfer to a large bowl and add the salt. Let stand for 10 minutes. Taste the carrots and if they are too salty for your liking, rinse and drain with a clean cloth.

Add all other ingredients and stir. Let sit in the refrigerator for at least 30 minutes before serving. The salad will keep in the refrigerator for 4 days.
